Sakara Life Inspired Kale Salad

I honestly did not expect a kale salad to be this good.  Seriously though, this recipe deserves an award!  Thanks to the people at Sakara Life for coming up with this masterpiece.  Not only is this a delicious salad but it's also full of healthy fats, protein, B vitamins, and beautifying sulfur.

For the Creamy Hemp Ceasar Dressing

  • 1/2 cup Hemp Seeds
  • 2 Tbsp Nutritional Yeast
  • 2 Tbsp Lemon Juice
  • 1 Tbsp Dijon Mustard
  • 1 clove garlic
  • 2 Tbsp Olive Oil
  • Water as needed for desired consistency

Blend until smooth

For the Parmesan "Cheese"

  • 1 clove garlic
  • 1/4 cup hemp seeds
  • 1/4 cup sunflower seeds
  • 3 Tbsp nutritional yeast
  • sea salt to taste

Salad Toppings

  • a few leaves of Lacinato Kale
  • Shaved Brussels Sprouts
  • Thinly sliced fennel
  • olive oil
  • sea salt
  • lemon juice
  • some walnuts or pecans
  • handful of dried tart cherries (optional)

First, you'll want to chiffonade your kale ( a fancy word for thinly sliced).  Kale can be quite fibrous and hard to chew so cutting it small helps with chewing and digestion. Stack your kale leaves and roll them up, then start making ribbon-like cuts. Place in a bowl and season your kale with a squeeze of lemon juice, a drizzle of olive oil and pinch of salt.  Massage until tender.  Next thinly slice brussels sprouts (however many you prefer, I used one) and fennel,  place in the bowl of kale.  Top with nuts of choice, parmesan "cheese", dried cherries (or any fruit of choice, I used blackberries) and caesar dressing. Enjoy!
